Heirloom Apple Varieties

Redfield

Ya’ll. Born of a cross between the Wolf River and the Kazak Niedwetzkyana, this medium sized apple has deep red flesh with pink to dark red skin. The bite is dry, not making it ideal for out of hand eating, but it has a high pectin content and can make for some fascinatingly colored jelly, cider and vinegar. The Hidden Rose is sweet, the Redfield is dramatic. This variety originated from the New York Agricultural Experiment Station in Geneva, 1938. We harvest mid-October. Our neighbors at West County Cider in Colrain, MA, are credited for bringing Redfield to its modern popular status as one of the most widely sought cider apples from their work starting in the 1980’s.
