Hudson’s Golden Gem
This tall, eye-catching apple wanted to be a pear, and succeeded in a very appley way. Found in a hedgerow in Tangent, Oregon in the 1930’s, a russeted gem, covered in a delicate constellation of white lenticels, harboring a sweet, nutty, crisp and very peary bite. Utterly uncomplicated, its sweet and juicy flavor has almost no acidity but still leaves you refreshed and delighted. Best enjoyed out of hand, but also dries well and compliments our sweet cider mixes. I personally prefer them layered between some wicked sharp cheddar, two hearty slices of Benny bread slices (iykyk) that are smothered with honey mustard and a healthy handful of arugula then grilled to golden perfection…and lastly dipped bite by bite in some VT maple syrup.
