Calville Blanc d’Hiver

Exalted by Juila Child as her favorite cooking apple, these famously lobed French culinary delights are often called the Queen of the Tarts, for they reign supreme in a tarte Tatin. Calville has stood the test of centuries of French chefs (since 1598!), was painted by Claude Monet in his Still Life with Apples and Grapes, and even described by Thoreau as “sour enough to set a squirrel's teeth on edge and make a jay scream.” Remarkably fine grained and champagne-like lightness, with winter white flesh as its Blanc d’Hiver name hints and a gorgeous pastel yellow green skin that gets a delicate blush when basked properly in the sunshine. These elegant and exquisite masterpieces will leave you waxing poetic about the unique perfection that is a Calville Blanc d’Hiver. Harvest in early October.
